Nutty Buddies





" Rush Hour 2" Nutty Buddies

Join Claud and the gang as they pull out all the stops to make this heavenly homemade treat..."Nutty Buddies."

For the Ice Cream:

  • 2 cups half & half or milk
  • 1 cup whipping cream
  • 2/3-cup sugar
  • 1 vanilla bean
  • 7 egg yolks
  • Yield: 2 Quarts


For the Waffle Cones:
  • 1 whole egg
  • 1 egg white
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 2/3 cup plus 1 teaspoon sifted all-purpose flour
  • 2 tablespoons melted butter
For That Irresistible Nutty Buddy Coating:
  • 16 ounces semi sweet chocolate, melted
  • 2 cups shelled, unsalted peanuts, chopped fine

To Make the Waffle Cones:

Preheat the waffle cone iron.

Beat the egg, egg white and salt in a small bowl with a fork until well blended. Beat in the sugar and beat until sugar is incorporated and the egg has lightened in color slightly, about 1 minute. Add flour and beat another 15 seconds or until incorporated and all lumps are gone. Add the melted butter and stir until well blended. Spoon a generous tablespoon of batter onto the center of a waffle cone iron. Bake for 1 minute then check for proper color. Cook an additional 5 to 10 seconds if necessary. Quickly remove the waffle onto a clean cloth towel and roll the waffle around the cone form. Hold in place a few seconds to set and then place on a wire rack to cool. Repeat process until all the batter has been used.

To Make the Ice Cream Custard:

Slit vanilla bean lengthwise and scrape the seeds into a medium saucepan. Add the vanilla bean pod, the half & half, cream and place over medium heat. Bring to a simmer and reduce the heat to low, stirring often.

Combine the sugar and the egg yolks in a mixing bowl and whisk until very thick and pale, at least 3 minutes. Slowly whisk a cup or so of the hot cream mixture into the egg yolk mixture, then whisk the yolk mixture back into the saucepan as slowly as possible. Return the saucepan to a medium-low heat and cook, stirring constantly until the mixture thickens enough to coat the back of a spoon.

Remove any lumps that might have formed by straining the hot custard through a fine strainer into a clean stainless steel bowl. Transfer any vanilla pods trapped in the strainer back into the custard. Place the bowl of custard into a larger bowl of ice water to chill the mixture as quickly as possible, stirring occasionally.

Transfer the chilled mixture to your ice cream machine and freeze according to the manufacturer's instructions. (Allow 30-40 minutes.)

Assemble Nutty Buddies:

Pour a tablespoon of melted chocolate into each waffle cone followed by an extremely firm scoop of vanilla ice cream.

Carefully dip each cone first into the melted chocolate; then immediately into the chopped peanuts. Repeat if desired. Delicious!
